In the production of Poiema wine, grapes are harvested in mid-October, and fermentation is carried out in wooden vessels. After fermentation, the wine ages 18 months in old oak barrels, and then another 6 months in the bottle. As a result, a wine with a ruby red color is obtained. The aroma is full and pleasant, with notes of dark fruit, dried plum and spice. Its taste is rounded, full and balanced. After the last sip, the wine leaves a pleasant persistence. AD HOC sparkling wine is an elegant and sophisticated wine made 100% from Chardonnay grapes, one of the most esteemed white varieties in the world. Produced in Trentino-Alto Adige, a region in northern Italy with an alpine climate ideal for fresh acidity and elegant aromas (a region known for producing some of the world's best sparkling wines, such as Ferrari). Vinified using the classical method where after harvest the grapes are pressed and the resulting juice is transferred to vessels (metal) for fermentation. Harvest 2018, the base wine was left in tanks until spring 2019 (alcoholic and malolactic fermentation) when it was transferred to bottles. Secondary fermentation in bottles lasted 5 years. The result is a complex wine of premium quality. The color is golden-yellow with shine, with fine, persistent bubbles (perlage), which is an indicator of longer aging on lees. The bouquet is complex where secondary and tertiary aromas dominate due to long fermentation in the bottle. Very clear notes of toast, brioche, dried apples, honey, walnuts, almonds, with nuances of citrus and ripe peaches. Then mineral and flinty notes that show the wine is produced from vineyards at higher altitudes (in our case vineyards are at 600 meters altitude). The taste is balanced and creamy. This is BRUT, therefore a dry wine, full-bodied with refreshing acidity. It has a rich, long-lasting finish with aromas of roasted hazelnuts, lemon peel and bread. Although already 7 years old, such a wine can last for years and develop complexity in the bottle. Our AD HOC sparkling wine falls into the Blanc de Blancs category (when wine is made exclusively from Chardonnay grapes), so you can expect exceptional elegance and freshness. Ideal as an aperitif and goes perfectly with seafood, oysters, sushi, white meat, white rind cheeses (e.g. brie), but also with roasted chicken or pasta with creamy sauce. Excellent accompaniment to all types of cakes and pastries.
